\nThis position supports the Executive Chef in all aspects of the culinary operation and maintains primary ownership of a la carte dining in the Hogan Grill Restaurant.

\nJob Duties (Items marked with an asterisk are essential functions of this position):
\nCreate menus and develop standardized recipes and techniques for food preparation and presentation for a la carte dining.*
\nHire, train, supervise, and develop culinary and stewarding team members. Schedule and monitor the work of kitchen staff to ensure that all kitchen functions are carried out efficiently and safely.*
\nEnforce sanitation and safety practices to ensure all legal and Hotel standards are maintained.*
\nOrder, requisition, and maintain inventory control of food products in order to maintain food quality and adequate supply levels at all times. Verify that supplies are received in the correct amounts and that they are stored correctly.*
\nManage variable cost centers to ensure profitability with food product and labor costs. Maintain updated costing for a la carte dining as well as lending banquet support as needed.*
\nMaintain a regular cleaning and maintenance schedule for all equipment to be in good working order by submitting regular service and repair requests.*
\nAttend designated department meetings as necessary and partner with the front of house to achieve department goals.*
\nPerform other duties as assigned.
\nQualifications:
\nMinimum of 7 years of related experience.
\nMinimum of 2 years experience in kitchen management
\nMinimum of 5 years experience in food preparation
\nPost-Employment - Must obtain ServSafe Allergen, ServSafe Manager, and RAMP certifications.
\nCompletion of high school or GED
\nAssociate’s degree - Culinary Arts
\nKnowledge, Skills, and Abilities:
\nStrong knowledge and experience in upscale casual or club dining restaurants.
\nAbility to convey information, work within strict deadlines, multi-task, and react quickly and effectively to challenges.
\nAbility to lead a team of employees with proven organizational and communication skills.
